I made this dish because I love bok choy! It’s dubbed a superfood because bok choy is full of selenium which helps clear toxins from the body. This plus it’s a great source of vitamin C. Also I forgot to use the mushrooms from last week and found that if you pulse mushrooms in the food processor, they blend in with any ground meat!
