Peach Paw Paw Bread

I really wanted to make paw paw bread because all the cool kids are doing it right now. Unfortunately only one of my paw paws were ripe enough so I used 2 peaches I got at the farmers market. They worked perfectly! You can also add bananas if you don’t have peaches. If you cut open your paw paw and it’s not gooey inside, it’s not ripe yet.
 
INGREDIENTS
Fair Shares
Paw paws or peaches or a combination (I had 1 paw paw and 2 peaches, enough for roughly 1 1/2 cups pulp)
2 cups flour
2 eggs
Other ingredients
1/2 cup sugar
1 tsp baking soda
1/2 stick butter, melted
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp salt
1/2 cup chopped walnuts
 
METHOD
Preheat oven to 350 degrees. Spray a loaf pan with cooking spray.
In one bowl, mash paw paw pulp and peaches. Add eggs, vanilla extract, and melted butter. In another bowl, whisk flour, sugar, salt, baking soda and cinnamon. Fold pulp mixture into dry ingredients. Add chopped nuts and stir till just combined. Pour into pan and bake for 40 minutes.
