Corn, Tomato, and Avocado Salad

This is the perfect dinner or side dish when corn is in season!
INGREDIENTS
Fair Shares
Corn, husks removed and cut off cob
Tomato, chopped
Butter for cooking corn
Fresh herbs
Other Ingredients
Avocado, peeled and chopped
Purple onion, chopped
Lime Juice
Salt
METHOD
Heat a skillet and melt about a tablespoon of butter. Sauté corn kernels for 5 minutes or so. Remove from heat and add the juice of one lime. Fold in tomato, avocado, and fresh herbs. (I had basil, mint, and chives from the garden) sprinkle with salt and serve. This would be great with feta but I didn’t have any on hand.
