Kohlrabi Slaw
Kohlrabi is low in calories, high in nutrients and a great raw snack. If you need an instant immune system boost, then try snacking on a cup of raw Kohlrabi. Of all the vitamins in kohlrabi, vitamin C is the most abundant. A cup of raw kohlrabi has almost 84 mg of vitamin C, which is more than enough to meet your daily requirement. It also has a good amount of the B vitamins, which play a role in increasing metabolic rates and maintaining healthy skin and hair.
Preparation
This recipe is from Recipe Zaar. I’ve made a version with carrots instead of radish that was delicious, too.
Ingredients:
2 small kohlrabi
1 cup radish (or carrots)
1 tablespoon white wine vinegar
1 teaspoon sugar
2 tablespoons fresh parsley, chopped
2 tablespoons olive oil
Directions:
1. Peel two smallĀ or one large kohlrabi.
2. Shred the kohlrabi and radishes.
3. Mix vinegar, sugar, and parsley in a glass bowl. Whisk in olive oil.
4. Add shredded veggies and toss.
5. Chill for 30 minutes or more.
