Tuscan White Bean and Lentil Soup

Member Joanne McAndrews found another winning recipe for us to share that can easily accommodate lots of Fair Share ingredients, such as the greens and white beans, not to mention a home-made broth. 

Preparation

From Cooking Light, this recipe has a Crockpot version as well as an Instant Pot version

Since I didn't want to outright steal the photo from the website, I'm including our own photo from our Winter Soup recipe, so don't expect your finished product to look like this photo! If you want to make it even more locally sourced, you could substitute wheat berries or oat groats for the lentils. Though it will certainly change the flavor and texture a bit, it's a hearty winter soup with great ingredients, so what could be bad?
