Squash Soup

Preparation

Peel a butternut squash or any other variety you enjoy. Cube it, toss it with olive oil and salt/pepper. At about 325 degrees roast it until tender. At the same time, roast garlic, onions and peeled/chunked apples. In the food processor or blender puree every ingredient as it comes out of the oven adding a bit of broth to keep things smooth. Once you have all the ingredients in the blender, puree until you like the texture, adding as much stock as you need. Warm it until heated through and top off with a great drizzle of olive oil and some sage.
