Garlic Scape Falafel

I get so excited when garlic scapes are in season. I basically use them in any recipe calling for garlic, but this is a favorite.
 
INGREDIENTS
Fair Shares
2-3 garlic scapes, chopped into 1 inch pieces
1/4 cup chopped parsley
1/2 cup chopped onion
Olive oil
 
Other ingredients
2 cans chickpeas, rinsed
4 tsp ground coriander
2 tsp ground cumin
1 tbsp arrowroot or tapioca
Salt and pepper
 
METHOD
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Add all ingredients except olive oil to a food processor and pulse. Drizzle olive oil and continue to pulse until combined. Using a scoop or a large spoon, shape mixture into patties and bake for 25 minutes. Flip and bake for 20 minutes longer. I serve them with hummus, feta, and cucumber.
