Preparation
This recipe was adapted from southernfood.about.com
Ingredients
1 share fresh tomatillos
1-2 chopped jalapeno peppers
1/2 large sweet onion, chopped
1 cup fresh cilantro leaves
1 teaspoon honey
1-2 cloves garlic, chopped
Salt and pepper, to taste
Remove husks and stems from tomatillos; rinse until sticky/waxiness is gone and coarsely chop. Place in food processor with the peppers, onions, cilantro, honey, and garlic. Pulse until coarsely chopped. Drain off excess liquids (perhaps saving for your bloody Mary) and add salt and pepper to taste. Refrigerate for a few hours before serving.
