Spiced Apple Crepes

Preparation
For Crepes
1 c. all purpose flour
1 1/2 c. milk
2 eggs
2 tbsp. sugar
1 tbsp. cooking oil
1/8 tsp. salt
In bowl combine flour, milk, eggs, sugar, oil and
salt; beat with a mixer until blended. Heat a lightly
greased 6″ skillet. Remove from heat. Spoon in 2
tablespoons batter; lift and tilt skillet to spread
batter. Return to heat, brown on one side. Invert pan
over paper towels; remove crepe. Repeat to make 16
to 18 crepes.
For Filling
3 tbsp. butter
4 cooking apples
1 tbsp. lemon juice
1/4 tsp. cinnamon
Dash of nutmeg, ginger, coriander (any or all)
1/3 c. sugar
Peel and core apples. Slice into 1/2 inch slices. Melt
butter in small saucepan and add apples and lemon
juice, lemon rind and spices. Cook over low heat for
5 minutes. Add sugar and cook until apples are
tender. Stir occasionally. Cool slightly. Fill crepes
with filling. Serve with maple syrup, caramel sauce
or whipped cream.
