Salad with wheat berries, fresh peas, and garlic scape vinaigrette

We’ve been getting such delicious lettuce the last several weeks and I am so excited it’s garlic scape season! I love making a simple vinaigrette with them. It’s also pea season so why not add some of these sweet peas to the salad. I don’t even cook them. They are so good right out of the shell. I added some wheat berries for a bit of texture and this simple salad is a wonderful light meal or starter.
INGREDIENTS
Dressing
Fair Shares
2 garlic scapes, chopped
1/3 cup olive oil
1 tbsp honey
Other Ingredients
1/4 cup white vinegar
1 tsp Dijon mustard
Salt and pepper
METHOD
Add everything but the oil to a blender or food processor. Combine for several minutes to incorporate the garlic scapes. Slowly add the oil to emulsify.
Grab some of that delicious lettuce you washed and top it with cooked wheat berries and shelled peas. Drizzle with vinaigrette and dig in!
Note: I make wheat berries in my instant pot and then throw them in the fridge. They are great in soups, salads, grain bowls. Grab a bag in your share and try them out. 25 minutes in the instant pot or 40 minutes on the stove. Cover with water, cook and drain.
