Refrigerator Kale Salad

I love salads that you throw together and they actually taste better the next day, and the day after that. This is a great one.
 
INGREDIENTS
Fair Shares
Kale, stems removed and chopped
Carrots, shredded
Kohlrabi, peeled and shredded
Purple onion, sliced
Radish, shredded
Honey
Olive oil
 
Other Ingredients
White Balsamic vinegar
Salt and pepper
 
METHOD
Add kale to a large bowl and drizzle with vinegar. Massage kale with both hands till it’s soft and kinda shrinks in the bowl. Add about a tbsp of honey and a few glugs of oil. Salt and pepper to taste. Add veg and toss. Taste and adjust seasoning, adding more honey if it’s too sharp or vinegar if too sweet. Throw in the fridge overnight and top with croutons or nuts just before serving (optional but it’s a great texture addition)
Keeps for up to 3 days. I also add chic peas sometimes, other times I’ll add cooked and cooled wheat berries for a grain bowl.
