Pizza Margherita
The standard by which all other pizza is judged. A margherita pizza (like a margarita cocktail) is a simple thing of beauty and is only as good as the ingredients used to make it. A good crust, fresh heirloom tomatoes, fresh basil and fresh mozzarella are the consummate ingredients. Here’s our version.

1 Mr. Meowski pizza dough, defrosted and rolled out to desired shape
1-2 large heirloom tomatoes
1 pt. sungold tomatoes
1-2 cloves fresh garlic, minced
1 package fresh mozzarella (the photo shows havarti, not mozzarella, sshhhhh)
Fresh basil
sea salt and freshly ground black pepper
Kreta olive oil
Preparation
Preheat oven to 500F. Wash all the tomatoes and coarsely chop the heirlooms (quarters are fine). Place in baking pan with the garlic and a drizzle of olive oil. Salt and pepper lightly. Bake for 20 minutes or as long as it takes you to prepare the crust and slice the cheese–that’s a hot oven, so keep an eye on them and stir after 10 minutes. Give the tomatoes a good stir, breaking up big chunks if necessary, and arrange over the crust. Top with cheese and return to oven for 10-15 minutes. Chop your basil while the pizza bakes. Check after 10 minutes to make sure the crust isn’t burning. Remove from oven and let sit for a minute. Sprinkle with fresh basil, slice and enjoy!
