Chorizo and Black Bean Lettuce Cups
When we get gorgeous lettuce like this, I like to use the leaves as a cup for food. This was super easy to come together since I cook my black beans in large batches and freeze them in 1.5 cup bags. I also made an avocado crema that is so fresh on everything.
1.5 cups black beans, cooked and thawed
1 jalapeño, frozen and thawed
3/4 cup plain yogurt
1/4 cup fresh cilantro
1 clove garlic
1 small shallot
Juice of 1 lime
1/4 tsp cumin
Salt and pepper to taste
Brown chorizo in a skillet. Add black beans and sauté till beans are warm. Set aside. Add yogurt, jalapeño, cilantro, avocado, garlic, shallot, lime juice, cumin, and a pinch of salt and pepper to a blender. Combine.
To serve: scoop meat/bean mix onto a lettuce leaf and top with avocado crema. Yum!!!!
