Daikon Radish Cake
Kevin found this recipe on a website called The Woks of Life a few years ago. I don’t remember if he made it, but I’m interested in trying it–mostly because it looks like pizza… The list of ingredients leads me to believe I would be sorely disappointed if I had pizza expectations–please do let us know if you try it and I’m right. Our small purple heart daikons would certainly give a different appearance.

- 1 Chinese turnip/daikon radish (about 20 oz.), grated
- 1 cup water
- 2 tablespoons vegetable oil
- 1 tablespoon dried shrimp, washed, soaked and chopped
- 3-5 dried Chinese black mushrooms, washed, soaked, and chopped
- 1 Chinese sausage, diced
- 1 scallion, chopped
- 1 cup rice flour
- 1 tablespoon cornstarch
- ½ teaspoon salt
- ½ teaspoon sugar
- white pepper, to taste
- Oyster sauce for dipping (optional)
