Roasted Sweet Potato Soup

WOW! Sometimes the easiest recipe is the best. This is super versatile as well. You can play up the sweetness of the potatoes or make it savory with just a few changes.
 
INGREDIENTS

Sweet Potatoes, peeled and diced.
Olive oil
 
Other Ingredients
1/2 onion, quartered
1/2 cup sour cream
1 cup water or broth
1-3 roasted garlic cloves or garlic powder
1-2 tsp hot curry powder
1/2 tsp cayenne pepper
Salt and pepper
 
METHOD
Preheat oven to 425 degrees. Toss diced potatoes in olive oil. Scatter on a rimmed baking sheet and place the onion in the middle and drizzle with olive oil. Sprinkle everything with salt and pepper. Roast for 20 minutes. Remove onion and wrap in foil. Toss potatoes and roast for another 10 minutes. Add potatoes, onion, spices, sour cream, and broth or water to a high speed blender and purée, adding more liquid as needed.
If you want to play up on the sweetness, add 1-2 tbsp maple syrup and sub 1 tsp ground thyme for the curry and cayenne.
