Comfort food at its best. This recipe would be a great opportunity to add in some sunchokes with the potatoes if you aren’t familiar with them.

Do you know you can freeze peppers? This time of year I have so many peppers rolling around in my fridge. When winter hits and I make chili, stew, soup, or meatloaf, I am happy I took the time to chop and freeze them.

If you want your family to eat more veggies, hide them in plain sight. I have found that if I mix spaghetti with zucchini spirals (zoodles) I don’t even know I’m eating them! All ingredients are Fair Shares.

This is how I roast all my veggies.

(Sara’s note: I roast everything to within an inch of it’s life–for an hour or more–so it’s caramelized and charred; it makes even your least favorite veggies delicious!)

This recipe is perfect for the celery we received. Mine was a tad bitter by itself, so mixed with the apple and adding a light vinaigrette was the perfect balance. It’s just so easy to make too!

Simple, yet satisfying, and pretty to look at. Substitute at will.
