Simple Sauté of Celtuce
Celtuce is a Chinese lettuce. The leaves are edible raw, but the stalk needs to be peeled to be eaten. The stalk has a subtle nutty taste, so I gave it a quick sauté with just a few ingredients.
Garlic Scape Falafel
I get so excited when garlic scapes are in season. I basically use them in any recipe calling for garlic, but this is a favorite.
Turkey Zucchini Meatballs
This recipe was actually for burgers but I don’t have buns so I made meatballs. They turned out beautifully and I think this recipe is best for meatballs because the meat was pretty sticky. You can try making burgers but they may fall apart.
Sizzling Mint Zucchini Salad
This recipe is inspired by two local dining experiences…This salad is lovely and simple. You can add protein or some grains to make it a meal.
Roasted Asparagus Salad with Mayfair Dressing

Miso Roasted Japanese Turnips
You can eat these right out of the oven or serve them at room temperature with a salad.
Daikon Refrigerator Salad

Mushroom Risotto
When I saw that fellow member Jamie Valencheck Shupp was making mushroom broth [for Fair Shares,] I had to try it in my fave risotto recipe.
Frittata
I love this dish because it’s easy, versatile, and fairly healthy. You can eat it for any meal or freeze it for future meals.
