Bison Taco Salad
The best thing about using ground bison for taco meat is that the meat is so lean that you don’t need to drain the fat! It’s also higher in vitamin b, zinc, iron, and omega 3 than beef. Winner winner taco dinner.

Even in the spring and summer I love soup! Its an amazing way to get in more veggies and nourishing broth! I started making my own broth because I was not happy with most products on the market, nor did I want to spend the money on the few I did like.
Fair Shares Overnight Oats
The texture of overnight oats is different from the cooked version, but still very satisfying, and you can heat them up quickly if you prefer them warm.
Enchilada Casserole
Layers of roasted chicken, squash, beans, cheese and sauce with tortillas. You can really add anything to this, as long as you have enough cheese and sauce, it will be delicious.
Monte Carlo Bars
When Lindy told me she made this recipe substituting Marina’s Cranberry Chutney and pecans from Fair Shares, I have to admit, I had no idea what Monte Carlo Bars were. My mind went to the cocktail with rye, which sounds fine to me, and also the Monte Cristo sandwich, which is something completely different.
Rice with Mushrooms and Sausage
This may be the best thing I’ve made in a while! I had lions mane mushrooms, but any mushrooms will work here. I didn’t have heavy cream so I used sour cream and quark–it worked beautifully! Don’t be afraid to use what you have and sub out ingredients make it vegetarian by leaving out the sausage.

I live by this quote. When I come up with a recipe for this group or any other recipe I will look at several different recipes and take parts of what I like and incorporate ingredients that I have. I rarely make a recipe as written. I hope you do this too. Swap out what you have in your share or your pantry.
