I brought home a couple of smoked pig’s feet from our last Blind Star delivery. I have to admit it’s the first time the phrase “These feet smell good!” came out of my mouth. As far as I know, it’s the first time foot bathwater went into my mouth, too. Anyway, I learned a few things and thought I should share it.
When you put pigs feet (or any other bones) in the crockpot and let them cook overnight, be sure to strain the broth before you add beans or any other solid ingredients for your soup. Do you see where this is going? The feet fall apart and there are tiny little knuckle bones that are just about the same size as beans. I even knew this from previous experience, but I wasn’t thinking. And I’m lazy.
After fishing out (most of) the bones from the beans, I added carrot and sweet potato, but I neglected to season it well. I had a thick, rich, smokey soup that was great with cooked spaghetti squash and fresh greens. This may not have been the most delicious meal, but with a face like this, who needs flavor?
Me! So I added plenty of salt, pepper and garlic powder.
And a kielbasa. And a lot or sriracha.
The beauty of bringing lunch to work in a jar rather than in plastic is that everyone will see how pretty your lunch is and they’ll be jealous. Plus it can be microwaved without the danger of leaching plastic into your food.
Of course, you can always transfer it to a bowl, but it’s much more fun trying to mix an overfilled, tall, thin jar without making a mess and then trying to eat it without getting your fork or spoon handle covered in food.
It’s not just lunch, it’s an adventure!
