Oven Roasted Tomato Sauce
This is just delicious and so easy!
INGREDIENTS
Fair Shares
Tomatoes
Olive oil
Garlic
Other Ingredients
Parmesan
Pinch of sugar
Salt and pepper
METHOD
Preheat oven to 350 degrees. Line a sheet pan with parchment paper. Chop large tomatoes into quarters, leaving cherry tomatoes whole. Peel a few garlic cloves Toss tomatoes and garlic in a bowl with olive oil. Distribute evenly on parchment and roast for 35 minutes. Let cool and pour into a blender with a few generous chunks of Parmesan, a pinch of sugar, and salt and pepper to taste. Blend until smooth. Serve with your favorite pasta or spaghetti squash.
I made a simple confit garlic and have that on hand in the refrigerator for any time I need garlic. Simply add peeled garlic cloves to a saucepan and cover with olive oil. Heat on medium high heat till the oil shimmers and bring the heat down and cover. Simmer for 2 hours. Let cool and refrigerate till needed.
