Kneaded Pie with Cornmeal, Squash, and Bacon

This was originally fast food for working women when work consisted of tending to animals, fields, home, and family.
2 medium-large zucchini or yellow squash, grated (about 6 cups)
1 1/2 teaspoon salt
2 strips bacon, chopped (optional)
1/2 cup feta, chevre or quark cheese
1/2 ricotta cheese
1/2 cup greek yogurt
1/4 cup olive oil
3 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 1/2 – 2 cups corn meal
Place the zucchini in a colander and toss with salt. Let stand 30 minutes with a plate and weight on top. Squeeze out as much liquid by the handful. If using, fry bacon until crisp, drain and set aside.
Pre-heat oven to 375 degrees. Combine cheese and yogurt in a bowl. Add the squash and oil, mixing well. Beat eggs in a bowl and add milk. Pour into cheese mixture stirring well. Add crumbled bacon, salt and pepper. Slowly add in corn meal, kneading until the mixture is dense like a wet dough.
Oil a round or square pizza pan or baking dish. Spread mixture in the pan and pat it down with your fingers. Bake until the pie is set and golden on top, about an hour. Remove from oven, let cool, cut into serving pieces and serve warm or at room temperature.
