Easy Au Gratin Potatoes

Comfort food at its best. This recipe would be a great opportunity to add in some sunchokes with the potatoes if you aren’t familiar with them.
 
INGREDIENTS

Cheese (I used tipsy cheddar), shredded

Other ingredients
1 1/2 cups heavy cream
1/4 cup grated Parmesan
1 tsp salt
1 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cayenne pepper
 
METHOD
Preheat oven to 350 degrees. Peel and slice 4 large or 6 small potatoes. Slicing with a mandolin to 1/4 inch works best. Spray an ovenproof baking dish (I had a 12 inch round dish) with cooking spray. Layer half the potato slices with a bit of overlap in pan. Add all spices to the heavy cream and pour half over the potatoes. Add half of the shredded cheese and half of the Parmesan. Continue with a second layer of potatoes, cream mixture, and cheeses. Spray a foil sheet with cooking spray and cover the dish spray side down. Bake for 30 minutes. Remove foil and bake for another 30 minutes or until the potatoes are fork tender. Let sit 10 minutes before serving.
