Sweet Potato with Coconut Oil, PB, and Caramel Date Sauce
This is a fast and easy (also lazy) lunch that tastes like dessert! Don’t tell the kids it’s good for them.
Preparation
1 Sweet potato, cut in half lengthwise
1.5 t. coconut oil (use unrefined, so it tastes like coconut)
1T. peanut butter (or almond butter or sunflower nut butter)
drizzle of caramel date sauce, regular date syrup, maple syrup or honey (I just dipped my fork into the sauce and drizzled the amount that clung to the tines–may be omitted)
Microwave or roast the sweet potato in the oven until soft. Top with the remaining ingredients, using your fork to mash the potato flesh and mix. Gobble it up, skin and all.
