1 pint strawberries, hulled and rinsed
2 tablespoons sugar
2 tablespoons orange juice
grated zest of 1 orange
8 tablespoons (1 stick) unsalted butter, room temperature
Puree the strawberries in a blender or food processor. Place the puree in a saucepan with the sugar and orange juice. Bring to boil, then simmer uncovered until the liquid evaporates. remove from heat. Stir in the orange zest and place in a small bowl. Once cooled, refrigerate until chilled.
Place butter in a mixing bowl and beat until fluffy. Add strawberry mixture a little at a time until combined. Spoon into serving dish and serve. Refrigerate for up to 1 week.
