Spiralized Sweet Potato Fries
I got a spiralizer for my birthday! Let’s see if you get sick of it before I do (doubtful…the cleanup is kind of heinous). We tried to spiralize a number of very dissatisfying vegetables, like skinny carrots, sweet peppers and cucumber–well, the cucumber worked okay, but the juice was everywhere. We decided to try the sweet potato, and although it didn’t give us great spirals, it sure tasted good fried up in coconut oil with garlic and spices. If you don’t have a spiralizer, just use your trusty knife. Seriously.
Preparation
Ingredients for two or three servings as a side:
1 large or 2 small sweet potatoes, spiralized or cut into this strips
2-3T coconut oil (enough to cover the bottom of your fry pan)
2-3 cloves garlic, pressed
salt, black pepper and spices to taste (I used sweet curry spice, chili powder and cayenne pepper, plus some extra garlic powder, but chipotle and fenugreek would be a good combo, too)
Heat the oil over medium high and add the sweet potatoes. Allow them to brown a bit before turning (you don’t have to let them burn like we did). After you’ve turned them and they’re about halfway done, squeeze the garlic over them and add salt and pepper. Cook to desired crispiness and add the rest of your spices to taste. Toss and serve hot.
