This is a wonderful, “one pot meal” using Fair Shares ground pork, scallions, and bok choy! We doubled the rice noodles (14 oz instead of 7 oz); if you don’t like spicy food, reduce the chili-bean sauce to 1/8 cup. We think that it would work well with any protein (ground turkey, ground chicken, tofu, etc.).
I had to buy tofu, since Mofu stopped making their local tofu, so that’s what I’m planning to make this with. And I’ll probably add extra spice to my dish. Click the link to view the recipe on EatingWell.com
