Roasted Patty Pan Squash with Chili and Lime
Patty Pan Squash, cut in half
1 gong pepper
1 tsp honey
2 tbsp butter, melted
1 tsp lime zest and juice of 1/2 lime
Mint for garnish
Place a rimmed sheet pan in the oven and preheat to 500 degrees. While the oven is heating, stir honey into the melted butter. Add lime juice and zest. Cut pepper in half lengthwise and remove seeds. Dice pepper and add to butter mixture. Toss cut squash in butter mixture to coat. When pan and oven are heated, remove pan and place squash cut side down on pan and bake for 12-15 minutes. Garnish with mint.
