This was super easy and really good! I tossed the veg in a bit of olive oil and roasted it on a sheet pan with parchment paper at 400 degrees for 35 minutes. I roasted tofu on a separate pan with parchment paper and added that at the 15 minute mark. You could do chicken on another pan for the same time as the joi choi. I tossed a little soy sauce, black sesame seeds, and salt and pepper on everything at the end and served it up. Easy and simple.
