Pecan Cabbage Toss
This recipe was submitted by a member, who said it was delicious. It looks like a stir-fried slaw–and with these ingredients, what could be bad?
Preparation
4 cups coarsely shredded cabbage
1/2 cup shredded carrot
1/4 cup sliced green onion
1 tablespoon butter, melted
1 teaspoon Dijon-style mustard
1/4 cup chopped pecans, toasted
In a large saucepan combine cabbage, carrot, onion, 2 tablespoons water, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Toss to mix. Cook, covered over medium heat for 5 to 7 minutes or until crisp-tender, stirring once. Drain. combine butter and mustard. Stir in pecans. Pour over cabbage mixture; toss. Season to taste.
Serves 4.
