Olive Oil Pancakes
Preparation

1 3/4 cup all-purpose flour
2 T. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 egg slightly beaten
1 1/2 cups buttermilk
4 T. extra virgin olive oil
1/3 cup dark chocolate broken into small
pieces
1/4 cup honey
Fresh mint
Mix the flour, sugar, baking powder,
baking soda, and salt together in a
mixing bowl. Whisk in the egg,
buttermilk, and 2 tablespoons of oil until
batter is smooth, the stir in chocolate
pieces.
Heat the remaining 2 tablespoons of oil
in a medium skillet over medium-high
heat. Ladle 1/4 cup of pancake mixture
into the pan and cook until golden
brown. Flip pancake and cook until
golden brown. Transfer the pancake to a
warm oven. Repeat with remaining
batter, oiling the pan as needed. Serve
with honey and garnish with mint or
serve with maple syrup.
