Kale Caesar Salad

INGREDIENTS

Kale
Head lettuce
Radishes
Cucumber
Sunflower shoots
1 tbsp olive oil
2 garlic cloves
 
Other ingredients
Red wine vinegar
1/3 cup mayonnaise
1/4 cup shredded Parmesan cheese
1 tsp Dijon mustard
1 tbsp lemon juice
2 anchovy fillets
Croutons
Salt and pepper
 
METHOD
Trim kale off ribs and wash. Chop and place in a big bowl. Splash a bit of red wine vinegar on the kale and massage with clean hands. Slice radishes and cucumber. Wash head lettuce and add to the bowl. Meanwhile, in a food processor or a blender (I used my Nutribullet) add mayo, shredded cheese, mustard, lemon juice, anchovies, olive oil, salt and pepper. Process to blend. Taste and adjust seasonings. Add half of the dressing to the kale mixture. Toss and add croutons and sprouts. Toss a bit more and add extra dressing if needed. Top with a bit of shredded Parmesan.
