Quick Carrot Salad with Pesto

2-3 tbsp olive oil
Other ingredients
2 tbsp pine nuts
1 garlic clove
Juice of 1/2 lemon
Salt and Pepper to taste

Shred carrots in a food processor. Set aside in a bowl. Using the same food processor, switch to the chopping blade and add the remaining ingredients. Pulse to combine. Adjust taste with salt and pepper. Add a tbsp at a time of the pesto to the carrots. Stir to coat. Save the rest of the pesto for pizza topping or a pasta sauce.
