Frittata
I love this dish because it’s easy, versatile, and fairly healthy. You can eat it for any meal or freeze it for future meals.
INGREDIENTS

6 eggs
Pork sausage, browned and drained
Cheese of choice, shredded
Other Ingredients
10oz frozen spinach, thawed
3-5 green onions, chopped
8oz cottage cheese
Salt and pepper
METHOD
Preheat oven to 325 degrees. Spray a pie pan with cooking spray. Crack eggs in a mixing bowl. Wisk with a fork to scramble. Add the rest of the ingredients and stir to combine. Fold into pie pan. Bake for 1 hour. Let sit for 5 minutes before cutting into 6 wedges.
