Zucchini Ribbon Salad

WOW! This is so refreshing. I found this recipe in an America’s Test Kitchen cookbook. I like the way they develop a recipe and always post Why This Works before each one. The trick here is to peel the zucchini and/or summer squash lengthwise and turn it each time so you peel the veg and stop when you get the the seeds. That’s where all the excess moisture is. Save this for a smoothie.
INGREDIENTS
Fair Shares
2 zucchini or summer squash( or both) shaved into ribbons with a vegetable peeler, stopping at the seeds.
2 tbsp olive oil
2 oz feta
Chopped herbs of choice
Other Ingredients
1 tsp lime zest
1 tbsp lime juice
I garlic clove, grated
Salt and pepper to taste
 
METHOD
Place squash ribbons in a bowl. In a smaller bowl, grate Iime peel with a microplane. Grate garlic with same microplane. Add oil and juice, salt and pepper. Whisk to combine. Toss ribbons in dressing, top with cheese and herbs.
