Cat Cora's Moroccan Lamb Patties
Preparation
Lamb Patties
1 pound ground lamb
3 Tablespoons breadcrumbs
2 Tablespoons finely chopped yellow onion
1 teaspoon each ground cumin, ground ginger and turmeric
¾ teaspoon cinnamon
1 teaspoon each salt & black pepper
Coriander seeds
½ teaspoon cayenne pepper
Mix ingredients until well combined. Shape into four ½ inch thick patties. Grill over medium-hot coals 5 minutes per side. To serve, place burger on a roll, spread with a thick layer of Harissa Mayonnaise (see below), then top with lettuce, tomato, cucumber and onion slices to your taste.
Harissa mayonnaise
2 Tablespoons canned harissa
4 Tablespoons mayonnaise
1 teaspoon fresh cilantro, chopped
1 teaspoon lemon juice
1 teaspoon olive oil
Whisk together ingredients until well combined.
