Fig and Cantaloupe Salad with Homemade Balsamic Glaze

 
INGREDIENTS
Fair Shares
Figs
Cantaloupe
Feta
1 cup Balsamic vinegar
 
Other Ingredients
Prosciutto
1/4 cup brown sugar
Pepper
 
METHOD
To make the glaze, heat vinegar and sugar in a saucepan over medium heat till combined. Turn heat to low and simmer for 10-15 minutes until the liquid reduces by about half. Make sure to run your oven exhaust fan due to the strong vinegar fumes.
Let cool.
 
To plate, arrange sliced figs and cantaloupe on a plate. Cut prosciutto into strips and pinch to make little clumps. Sprinkle with feta. Crack fresh pepper on top and drizzle with glaze.
