Cauliflower Adobo
Here’s a fun and different side dish for thanksgiving or any occasion. It’s got a bit of sweet, a bit of tang, and a lot of flavor with very little effort. If you are lucky to get purple cauliflower it’s also gorgeous!
INGREDIENTS

Cauliflower
3-5 garlic cloves, minced
I Thai chili pepper, split in half lengthwise
2 tbsp olive oil
3 tbsp soy sauce
Green onions, sliced thin for garnish
Other ingredients
2 tsp black pepper
1/4 cup rice wine vinegar
1 tsp brown sugar
1/4 cup water
2 tsp corn starch
METHOD
Preheat oven to 400 degrees. Cut cauliflower into bite sized pieces and toss with olive oil. Place on a parchment lined baking sheet and bake for 10 minutes. After the cauliflower comes out of the oven, add a bit more oil to a Dutch oven and slide the cauliflower in. Add all other ingredients except for corn starch. Stir to coat the cauliflower and place lid on pan. Cook for about 5 minutes. Remove lid and scoop about 1/4 cup of sauce out. Add the corn starch to the sauce and combine. Add it back into pan. Toss to coat cauliflower. Serve by itself or over rice.
