WOW! This is so refreshing. I found this recipe in an America’s Test Kitchen cookbook. I like the way they develop a recipe and always post Why This Works before each one. The trick here is to peel the zucchini and/or summer squash lengthwise and turn it each time so you peel the veg and stop when you get the the seeds.
