Fresh Fig Margaritas and Tomato-Poblano Salsa

Founding member Joanne McAndrews shared some yummy ideas and recipe links for figs and poblanos. For those of you not big on figs, making them into a simple syrup and swirling it into a cocktail might just make it easier for you to reap the health benefits.

GETTIN’ FIGGY WITH IT

I will admit that we are not really “fig people”. We received ground beef, tomatoes, poblano peppers, and figs in our most recent share. This called for a taco night, with a homemade tomato-poblano salsa and fresh fig margaritas. The figs were used to make a simple syrup– they didn’t impart much flavor but rather a pretty pink hue. I’m thrilled to have found a fun fig recipe!

Fiber: 1 gram
Copper: 3% of the Daily Value (DV)
Magnesium: 2% of the DV
Potassium: 2% of the DV
Riboflavin: 2% of the DV
Thiamine: 2% of the DV
Vitamin B6: 3% of the DV
Vitamin K: 2% of the DV

Hooray for fiber and other goodies in the figs! Margaritas have numerous health benefits, in my opinion…
