Enchalasagna

I found some kale in the back of my fridge that had wilted. I really need to clean it out! Anyway, I also had chicken chorizo sausage, Del Carmen black beans, and the new queso quesadilla cheese from Hemme Brothers so my quick enchilada casserole built like a lasagna was in order!
 
INGREDIENTS
Fair Shares
Chicken chorizo sausage
Kale, cleaned and chopped
Green onions, chopped
Black beans, cooked
Queso quesadilla cheese, shredded
 
Other Ingredients
Enchilada sauce
Corn or flour tortillas
 
METHOD
Heat oven to 350 degrees. Spray a large casserole with cooking spray. In a large skillet, brown meat and add chopped onion. Add kale in batches till it wilts. Add beans to pan to warm. Add a thin layer of enchilada sauce to casserole. Add a layer of tortillas, and half the meat mixture. Sprinkle some sauce on top and repeat with another tortilla layer and the rest of the filling. Add some sauce and top with a tortilla layer. Spread the rest of the sauce on the tortillas and cover with the cheese. Bake for 35 minutes.
