Watermelon Salad
My first watermelon of the season deserves some special treatment! This is summer in a bowl for me. So easy and delicious.
INGREDIENTS
Fair Shares
Watermelon, cubes
Feta
Mint
Other Ingredients
Aged Balsamic Vinegar (you can use FS balsamic, I just happen to have some really thick, aged stuff from Modena)*
Cracked pepper
*editor’s note: the Kreta Balsamic with Date Lady Date syrup (appr. 2 parts vinegar to 1 part syrup), both from Fair Shares makes a fabulous sub for aged balsamic–not as thick, but super yum)
METHOD
Slice and cube melon. Place in a bowl and sprinkle with feta and chopped fresh mint. Add a bit of cracked pepper and drizzle vinegar over the top. You can use basil instead of mint and it is just as delicious.
