Turkey Zucchini Meatballs

This recipe was actually for burgers but I don’t have buns so I made meatballs. They turned out beautifully and I think this recipe is best for meatballs because the meat was pretty sticky. You can try making burgers but they may fall apart.

INGREDIENTS
Fair Shares
Ground turkey
1/2 zucchini, shredded
Marinara sauce
1 tbsp olive oil

Other ingredients
1 tbsp mayonnaise
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper
Shredded Parmesan

METHOD
Mix ground turkey with zucchini and mayonnaise. Add garlic and onion powder. Roll mixture into about 15 balls. Refrigerate for 10 minutes. Heat oil in a large skillet. Add meatballs to pan and sprinkle with salt and pepper. Cook undisturbed for 5 minutes and then carefully flip with tongs. Salt and pepper and place a lid on the skillet. Cook for another 5 minutes and add sauce. I did not serve them with pasta so I used about 1 1/2 cups sauce. If serving with pasta, use the whole jar. Top with shredded Parmesan to serve.
