Beef Stew
How could something this easy be this satisfying? And under an hour for this deeply comforting meal is a win!
INGREDIENTS
Fair Shares
Grass fed beef stew meat
Potatoes, peeled and diced
Carrots, diced
2 tbsp olive oil
2 tbsp flour
Other Ingredients
1 small onion, diced
2 ribs celery, diced
3 cups beef broth
1 tsp sweet paprika
1 tsp thyme
Salt and pepper
1 cup frozen peas
METHOD
Heat oil in a large Dutch oven. Add meat to pan and sprinkle with salt and pepper. Brown for 8-10 minutes flipping once. Sprinkle flour over meat and sauté until the flour dissolves. Add a bit of stock and scrape the brown bits from the pan. Add all other ingredients besides the peas. Bring to a boil and then turn down to a simmer. Cover and simmer for 35 minutes. Stir in peas and simmer for 10 more minutes. Adjust seasonings if needed and serve.
