Sizzling Mint Zucchini Salad

This is a super easy side to whip up in about 20 minutes. We served it alongside burgers and it was a perfect contrast to the rich meat.
 
INGREDIENTS
Fair Shares
Zucchini, chopped
1 tsp honey
2 tbsp olive oil
Crumbled feta
 
Other Ingredients
Fresh mint, about 3 tbsp chopped
3 tbsp sesame seeds
1 tbsp red wine vinegar
1/2 tsp red pepper flakes
Salt and pepper
 
METHOD
Add chopped zucchini to a bowl and add red wine vinegar, honey, and a bit of salt and pepper. Toss to combine. Heat oil in a saucepan and add sesame seeds and red pepper flakes. Sauté till the seeds turn a bit darker and add most of the mint, reserving about 1/2 tbsp. Stir for a minute and then pour directly over the zucchini. Combine and add feta. Finish with reserved mint. Let sit at room temp for 30 minutes for best flavor.
