Enchilada Casserole

Layers of roasted chicken, squash, beans, cheese and sauce with tortillas. You can really add anything to this, as long as you have enough cheese and sauce, it will be delicious.

Enchilada Sauce
Preheat oven to 400 degrees
Spray a large glass baking dish with cooking spray. Spread a thin layer of sauce on the bottom and then layer tortillas, cutting and overlapping to fit. Spread out chicken, squash, and beans on top of tortillas. Sprinkle with cheese and sauce. Repeat with another layer. Top with tortillas and sauce. Sprinkle with cheese and bake for 35 minutes.
You can make it vegetarian by adding more veggies and leaving out the chicken. You could use browned bison or turkey. Try green sauce instead of red. Add some sautéed greens or mushrooms. This is so versatile.
