Magic Scavenger Hunt Salad
Here’s a salad I came up with that knocked our socks off. It’s magic because it doesn’t necessarily sound like a delicious combo, or a salad, but it had lots of shoots and looked like a salad, so that’s what I’m calling it. It also happened to be a bit of a scavenger hunt, as I used up a lot of loose ends in my fridge.
Preparation
Toss the following ingredients and let sit while you prepare the rest:
2 packages Claverach shoots (I used radish and sunflower)
lemon and lime juice from 1/4 each lemon and lime
a drizzle of really good aged balsamic vinegar
1 large or two small tomatoes
1/2 to 1 peach
1 small cucumber
1 sweet red bell or corno di toro pepper
1/2 avocado
1 or two jalapeƱos (to taste) OR a few Pimientos de Padron
anything else you find floating around your refrigerator that sounds good with this
Make a quesadilla in a large skillet, with or without a little olive oil to crisp up the tortillas. Place one large tortilla in the hot skillet and top with Heartland Brimstone or Ropp Smoked Cheddar, or your favorite cheese or combo of cheeses, grated or cut in slices and spread out over the bottom tortilla. Top with the second tortilla and let cheese melt and bottom tortilla begin to brown before flipping carefully.
Cut the quesadillas and arrange on plates. Plop on a healthy dollop of the following mixture heated on the stove or in the microwave:
1 cup del Carmen black beans
1 cup cooked butternut squash left over from last night’s dinner
Then put the salad on top and throw on a couple tortilla chips.
Served two. Should have served four. We were sooo stuffed. But it was sooo good (and good for you).
