Fair Shares Niçoise Salad

INGREDIENTS

Asparagus
Lettuce
Chicken breast
Eggs
Lemon tarragon vinaigrette from An Olive Ovation
Olive oil

Baby potatoes

METHOD

Cook eggs and potatoes in Instant Pot on manual setting for 2 minutes. Let pressure release naturally and place eggs in ice bath to cool. Set potatoes aside to cool. You can also boil in a pan on the stove for 10 minutes.

Roast skin on chicken rubbed with olive oil and sprinkled with salt and pepper on parchment at 400 degrees for 35 minutes or until cooked through. Set aside to cool or do this a day in advance and refrigerate.

Brush asparagus with olive oil and roast on a rimmed baking sheet with parchment at 400 degrees for 8-10 minutes. If cooking asparagus with chicken, add asparagus pan to oven when chicken has 5 minutes left so chicken can rest for 10 minutes before slicing.

Toss lettuce in dressing and plate. Add ingredients on top of tossed lettuce and drizzle a bit more dressing and salt and pepper.
