Quick Blackberry Preserves with Overnight Oats
Quick Blackberry Preserves
2 pints blackberries (Fair Shares)
2 tbsp sugar
Juice of 1/2 lemon
Mix blackberries with sugar and mash with potato masher. Add lemon juice and sauté on medium heat to reduce, stirring occasionally It took me about 25 minutes till I got the consistency I wanted. Set aside to cool and then refrigerate.
Overnight Oats
1 cup oats (Fair Shares)
1 cup milk of choice
1/2 cup plain yogurt (FS)
1-2 tsp honey (FS)
2 tbsp chia seeds
1/2 tsp cinnamon
1/2 tsp vanilla extract
Mix all ingredients together and split into 3 generous servings or 4 smaller servings. I like to add a scoop of protein powder. You can add maple syrup or cocoa powder. Refrigerate overnight and top with a scoop of preserves.
