Cabbage Sausage Soup

It’s soup season!
🎶 The most wonderful time of the year…
This soup can be made with whatever sausage you have on hand. I added 2 potatoes, but you can add carrots and celery, leeks, mushrooms, or even cubed winter squash.
INGREDIENTS
Fair Shares
1 cabbage, cored and chopped
Sausage of choice
1 onion, diced
2 garlic cloves, minced
1 tbsp olive oil
 
Other Ingredients
2 potatoes
1 quart broth or more if you prefer it brothy
2 tsp seasoning of choice ( I used Penzeys Turkish)
Salt and pepper to taste
METHOD
Heat olive oil in a large Dutch oven on the stove and brown sausage. Add onion and sauté till translucent. Add seasoning, broth, potatoes, and cabbage. I had a large cabbage and it barely fit in the pot. If your pot is not big enough, add half the cabbage and put the lid on. Turn the heat to low and let sit till the cabbage wilts. Remove lid and add the rest. Continue on low for 20 minutes or until the potatoes are tender, stirring occasionally. Season to taste I ended up adding another tsp of the Turkish seasoning and about a half tsp of ground white pepper. It was delicious and I ended up freezing a third of it for later.
