Mojo is an easy flavor punch to add to your roasted asparagus. If you haven’t tried the citrusy, garlicky sauce, often referred to as Cuban barbecue sauce, now is the time to put this Del Carmen delight in your shopping cart, whether “Del Carmen Choice” is on your weekly menu or not.
1lb. fresh asparagus
2-3 T. Kreta Olive Oil
1/4c. Del Carmen Mojo
Salt and Pepper to taste
Prep the asparagus and toss the spears with olive oil. Roast in a 400F oven, about 12 minutes for thick spears, and 6 to 8 minutes for thin spears. Transfer to a bowl and splash with mojo. Toss and taste for seasoning. Salt and pepper if needed and serve hot or room temp.
This is also delicious marinated in the mojo over night, then served over green salad.
Mojo mixed in plain yogurt makes a spectacular salad dressing, too!
