Stir Fry with Bok Choy

I love bok choy. It’s a wonderful veggie to use in a stir fry. Did you know that bok choy is packed


with vitamins C, A, and D? It’s nutritious and delicious! I love that you are almost getting 2 veggies in one with the crunchy stems and the tender greens. I just chop it up and fold it into a dish.

 
INGREDIENTS
Fair Shares
Bok choy, cleaned and chopped
Red peppers, chopped
Chicken, roasted and chopped
Soy sauce
Olive oil for stir fry
 
Other Ingredients
Hoisin sauce
Sriracha (if you like spicy)
Ramen noodles
 
METHOD
Cook noodles according to package instructions.
Heat a bit of oil in a sauté pan and stir fry the bok choy and peppers. When the green part of rhe bok choy starts to wilt, add the cooked chicken and 2-3 tablespoons of the hoisin. Splash a few glugs of soy sauce and stir. Add the sriracha if using. Drain the noodles and add to the pan with the veggies. Stir to combine.
