Tahini 101

Tahini is a paste made from ground sesame seeds. It used in abundance in mideastern cuisine. It is one of the main ingredients in hummus. You can also use it in salad dressings and sauces to add some earthy richness.
 
Tahini will settle, so you must mix it to incorporate before using. Refrigerate after opening.
 

Hummus

INGREDIENTS

1/2 cup tahini
1/4 cup olive oil
2 garlic cloves
 
Other ingredients
2 cans chick peas, drained
Juice of 1 large lemon
1 tsp ground cumin
Salt and pepper to taste
 
METHOD
 
Add all ingredients except oil to a food processor. Pulse to combine, pushing down the sides as needed. Add the oil a bit at a time while running machine. Add more oil or some water till you reach the desired consistency. Serve with veggies and chips.
 

Tahini Dressing

INGREDIENTS
Fair Shares
1/4 cup tahini
1/4 cup olive oil
2 tsp homey or maple syrup
 
Other ingredients
1 tsp Dijon mustard
3 tbsp lemon juice
Salt and pepper to taste
Ice cold water
 
METHOD
Add everything but the water to a bowl and whisk. Add cold water? A tablespoon at a time till the dressing is creamy and the desired consistency.
This is fantastic tossed with kale or other hearty greens. It also works great on iceberg!
